Among the many breweries in the sake hotspot of Jojima, this is a well-established store that has over 250 years of business history.
They use the soft water of the Chikugo River to make a ’women’s sake’ that has a light yet full flavor. There are numerous wooden buildings on their expansive premises, with shiny black ceiling beams and floors as well as building supports that exude personality. On the brewery’s second floor old sake-making tools are exhibited such as large pots, steaming baskets, buckets, casks, and tanks used for squeezing. At the establishment’s shop you can purchase goods or have a taste test. Their ”Junmai Daiginjo ’Hana-no-tsuyu’” is best enjoyed a light Japanese dish with a chilled sake so you can enjoy the scent of the ginjo. Their ”Najima” sweet potato shochu has a crisp and sharp flavor that goes perfectly with any dish. Their wheat shochu ”Karasu” is made with barley koji from black koji mold, and it has characteristically deep aroma-- it’s perfect for full-bodied foods. Mariko Tomiyasu from the production department highly recommends trying it on the rocks. You can also enjoy unique shochu made with shiso and aloe.
